Yes we are still alive and well!

I know our family has been off the map for a while, but we are back and ready to keep it moving. Our summer started off with a crazy detour. We had a family member who lived with us involved in a horrible motorcycle accident. We became instant caregivers, devoting most of our time to his care. Thankfully he is on the road to recovery now and living with his mother in her hometown. During this time I also lost my grandmother who lived a long and wonderful life. Keeping track of my personal fitness these few months have been difficult to say the least.  I was able to keep my butt moving, but my diet was far from correct. I am back on track and feeling positive about the rest of our summer before school starts again.

Mom's 1st Race

Since Mother’s Day is this weekend I thought it was a great time to tell all of you how proud I am of my Mom. Growing up she raised my brother and myself as a single parent and always made sure we had what we needed, what we wanted and then some. I can’t ever remember a time that she really took time for herself, especially her health. This year our family decided to make improvements on our own health and fitness so my Mom told me she was motivated to do the same. This past month she completed her first two 5K races! She has never done something like this ever and I know the courage and will power it took for her to do it.

She called me the morning she completed her first race so overwhelmed with emotion and excitement. She told me she didn’t tell me before hand that she entered because she wanted to make sure she finished the race and didn’t fail. My heart broke for a moment because I would have been her biggest cheerleader. She was hooked after one race and entered another, finishing even faster than her first race. We bonded over the phone on her victories and I even got her to register for the Women Rock Chicago Race with me that’s being held this September.

Grocery Shopping Trip @ Sam’s & The Fresh Market

I was able to get in a little healthy grocery shopping this weekend at Sam’s and The Fresh Market. I always find great produce at Sam’s and The Fresh Market is one of my favorite stores to shop in. They have the hard to find ingredients for healhy meals and the store is so clean. This is huge for me, not to mention their customer service is the best I have ever seen.

Everything I purchased was needed to make the recipes I have planned out for the week. My bill was way larger than I ever spend, but a lot of the items will last for some time. This week I will post some of the recipes I made for us from this grocery trip. They are delish!

Recipe: Whole Wheat Cranberry Scones

I made these for myself and the family this weekend and they were a hit. They were super easy to make and my kids had fun helping. I will say I was out of oranges so we left out the 2 teaspoons of grated orange rind from our scones.

Scones

  • 1-1/2 cup All-Purpose Unbleached Flour
  • 2/3 cup Whole Wheat Flour
  • 1/4 cup Granulated Evaporated Cane Sugar
  • 2-1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 3 tablespoons butter cut into small pieces
  • 1/4 cup Fruit-Juice Sweetened Dried Cranberries
  • 2 teaspoons Grated Orange Rind
  • 1 large egg lightly beaten
  • 1/2 cup Fat-free Buttermilk
  • 1 teaspoon

Preheat the oven to 375 degrees.  Line a baking sheet with parchment or wax paper.

Combine the butter, all-purpose flour, whole wheat flour, granulated sugar, baking powder, baking soda, and salt in a large bowl.  With a pastry blender, cut into the butter until the mixture is crumbly.  Add the cranberries and orange rind and stir with a fork.  Add the egg and buttermilk and stir with a fork until the dry ingredients are just moistened.

Gather the mixture into a ball, place on the baking sheet, and pat into a 7-inch circle.  Cut into 10 one-inch wedges with a knife dipped in flour.  Do not separate the wedges.  Bake until golden brown and when a toothpick inserted into the center comes out clean – about 20 minutes.

Transfer to a rack.  Sift the confectioners’ sugar over the top.  Cut with a serrated knife while still warm and serve.

Serving size: 1 wedge, Calories: 210, Fat Total: 4g, Saturated Fat: 2.5g, Carbs: 37g, Fiber: 2g, Protein: 6g  

What a loss…in pounds!

I have had such an amazing week of healthy eating and fitness fun. Last week I started writing down everything I ate and also recording my calorie intake. I checked my weight on the scales and I was so disappointed in myself. I was the heaviest I have ever been in my life and it sucked. I decided it was time to kick my ass into shape again. Lord knows it has been years since I was happy with the way I looked.

I started out the week at 226 lbs. and even though I am 5’10 thats a lot of pounds y’all. I followed healthy recipes from a new cookbook I have, making sure I cooked two of the recipes everyday. I worked out to Focus T25, just 25 minutes a day of heart pounding butt kicking workouts. I did hit the gym three times and managed to get in some miles on the treadmill and also rehab on my knee. I was bummed that I couldn’t even lift half of what I was use to, but I’m getting there. I also started drinking Shakeology half way through the week as my morning meal. I had never tried it before and I was surprised at how yummy and filling it was. So this morning when I got on the scales I was over the moon to see I had lost 6 lbs total in my first week. We all know this will not be the norm and that there is water weight, but 6 lbs is 6 lbs in my book. I think it’s a great motivator to see the scale drop and to feel like you have so much more energy. I even got my hubby to drink a few of my shakes and he’s even thinking of checking out my workouts too.

As I start this week I am going to keep tracking my calories and keep making healthy meal choices. I will post some of the recipes I have been using as well so you can give them a try. I am pushing through with T25 and Shakeology. I am also super excited to be a new Beachbody Coach because I have already started meeting new people who are working on their fitness too. We hold each other accountable and lift one another up. I hope I have great results for you guys next week. I hope all of you keep moving, stay positive and know the smallest changes can make such a difference.

Meet The Pecks!

Hi, I’m Shelley wife of Big Chris (that’s what friends and family call him) and we have 3 amazing kids. Chris is a hard working union man who keeps the food on the table. I own another blog called High5Saver and I’m also an Independent Team Beach Body Coach. We stay so busy sometimes I have to remember to breathe.

Chris Jr. or “Little Chris” as we call him is a junior in high school and loves sports. He currently plays football and baseball in school and plays for the Morris Grinder’s travel baseball team. He’s the one that keeps our cars on the road constantly.

Taylor is our daughter and she’s 11. Taylor was born with a rare genetic chromosome disorder called Partial Trisomy 15 and every single day is a blessing with her. She is healthy, but has had more surgeries and hospital stays than any child should have to go through. She is developmentally disabled, but she is her oldest brother’s biggest cheerleader. She loves going to his football and baseball games. She says her favorite part of travel baseball is sleeping in hotels. :) She and her little brother have a love hate relationship, but it gets better every day.

Clay is our youngest and at 9 years old is the most creative Peck in the bunch. He is currently homeshooled so he’s my right hand man. Although he doesn’t enjoy organized sports, he likes to cheer on the Florida Gators during football season with everyone else in the house (not me GO FSU!). He loves to be active and play outdoors.

As you follow our family’s blog I hope you can relate and share in our fitness journey. We aren’t professionals, but we do want to live long, healthy and happy lives.

The Spring Break Burn!

Our family’s spring break wasn’t beaches and sun tans this year, just more winter. We actually had snow this week! These are the times I miss being a Floridian. Thanks to the weather and our oldest son’s baseball schedule we stayed home this year for spring break, but we kept it moving.

I recently became a Team Beachbody Coach and although I am currently not using Shakeology, I am using Focus T25 by Shaun T and it is awesome. I have done this workout before and had great results. Since gaining almost 20 lbs. after my race injury in January I knew I could count on the workout to do its magic again. I’m on day 3 and calorie counting as well and already I feel better. I do hit the gym for a 2 mile brisk walk/jog too every day. Our youngest children are doing the workouts too. However at a much more modified version.

My biggest accomplishment of the week was NO COFFEE!!! as you get to know me you will find that coffee is a must for me. I know I could drink it straight up, but I’m a lover of creamers so I just couldn’t do it. Day one was headaches and crankiness, but on day 3 I’m ok with my coffee break up. Have a happy and fit day!
